Avocado Smash aka Avocado Toast

I’m not a morning person and never have been.  I require a minimum of eight hours of sleep, or else I will be in a horrible mood all day.  Believe me, I’ve put in a lot of research.  As you can imagine, becoming a mother kind of puts a wrench in getting eight hours of sleep.

You won’t find pictures in my Instagram feed of me cuddling my kid in the morning, talking about how wonderful life is watching the sun rise while lying in bed.  It’s not going to happen.

Unless you have a better reason for me to be up at the crack of dawn, I’d rather be sleeping.  I prefer to watch the sun set with a drink in my hand.  I do make exceptions, though.  I love mornings when leaving town on a road trip or an early morning flight.  And I have to admit, I feel way more accomplished most days when I wake up early and get stuff done before 9 a.m.

Typically, I enjoy drinking my coffee and waking up slowly.  And, I enjoy eating my breakfast around 10 a.m., so I like quick, easy, and healthy.

Since Kim Kardashian recently discovered the Serial podcast, like two months ago, I’m going to tell you about the time I discovered Avocado Toast.  Even though it’s really hip right now and everyone eats it, I bet you haven’t eaten it like this.

Avocado Smash Avocado Toast

Apparently, this particular recipe is the thing to order at the Bluestone Lane coffee shop.  Or you can make it yourself at home:

Avocado Smash {Original Recipe from Family Circle}

Ingredients:

1 peeled and diced avocado

1 Tbsp goat cheese**

1 tsp lemon juice

Dash of salt

Directions:

In a small bowl, combine and smash with a fork leaving some chunks.  Spoon on to a slice of toast (I prefer whole wheat.)

That’s it!   Your morning just got that much better, and it may actually be incentive to get out of bed with the sun rise.

**The original recipe called for Feta cheese.  I prefer Goat cheese.  It was delicious, but try it either way!
