Inauguration Day Turkey Patties

If you read my blog, you know I have a couple of picky eaters in the house. So, if they both enjoy something, I figure it’s good enough to share. So, on this Inauguration Day (my daughter asked if we were watching a Valentine’s parade), Republicans and Democrats can rejoice in the yummy goodness of these turkey patties, apparently an Obama family favorite, and now a Jones family favorite.

I believe this recipe came from Family Circle, it was a “Dish from the White House” from White House Executive Chef Cris Comerford.

Turkey Patties

1 pound ground turkey
¼ cup panko crumbs
1 egg white
2 tablespoons minced scallions
1 clove garlic, minced
2 tablespoons low-sodium soy sauce
2 tablespoons chopped fresh parsley
Zest, juice of 1 lemon
1 tablespoon canola oil

In a large bowl, blend ground turkey with panko, egg white, scallions, garlic, soy sauce, parsley, lemon zest and juice. Shape into 4 equal patties.

Heat canola oil in a large nonstick skillet over medium heat. Cook turkey patties for about 5 to 7 minutes on each side or until cooked through.

The reality is no matter what your political affiliation, we can all agree that delicious, healthy food is an important part of moving this country forward.
