I needed something quick and I didn’t have much to choose from. A quick search for sweet potatoes on Pinterest gave me this delicious recipe. It was easy, healthy and so, so good! Even my picky eater, sweet potato hating daughter said it tasted good. Perfect for a Meatless Monday, this is a quick and healthy meal for the whole family!
Recipe altered from original recipe in Health.com:
{2 servings}
1 medium sweet potato, peeled and cut to 1 inch pieces
½ cup red wine vinegar
¼ cup sugar
2 black peppercorns
½ red onion, sliced
¼ tsp. salt
dash of pepper
4 tortillas
2 cups baby spinach
½ cup cheddar cheese
½ cup shredded mozzarella
2 tsp olive oil
Steam potatoes until tender (about 15 min.)
In a small saucepan, combine vinegar, sugar and peppercorns; bring to a boil and stir to dissolve sugar. Place sliced onions in a medium heatproof bowl; pour hot vinegar mixture over onion and let stand 20 min.
Transfer cooked potatoes to a bowl. Use a fork to mash potato with salt and pepper; divide filling among 2 tortillas. Top each tortilla with 1 cup spinach, ¼ cup cheddar cheese, ¼ cup mozzarella cheese and another tortilla.
Heat large non-stick skillet over medium-high heat. Heat 1 tsp. oil and transfer 1 tortilla to skillet; cook until quesadilla is crisp and cheese has melted {about 3 minutes per side.} Put cooked quesadilla on a plate and repeat with remaining oil and tortilla.
Cut quesadillas into quarters and serve with pickled onions.
