If you read my blog, you know I have a couple of picky eaters in the house. So, if they both enjoy something, I figure it’s good enough to share. So, on this Inauguration Day {my daughter asked if we were watching a Valentine’s parade}, Republicans and Democrats can rejoice in the yummy goodness of these turkey patties, apparently an Obama family favorite, and now a Jones family favorite.
No matter what your political affiliation, we can all agree that delicious, healthy food is an important part of moving this country forward.
I believe this recipe came from Family Circle, it was a “Dish from the White House” from White House Executive Chef Cris Comerford.
Turkey Patties
1 pound ground turkey
¼ cup panko crumbs
1 egg white
2 tablespoons minced scallions
1 clove garlic, minced
2 tablespoons low-sodium soy sauce
2 tablespoons chopped fresh parsley
Zest, juice of 1 lemon
1 tablespoon canola oil
In a large bowl, blend ground turkey with panko, egg white, scallions, garlic, soy sauce, parsley, lemon zest and juice. Shape into 4 equal patties.
Heat canola oil in a large nonstick skillet over medium heat. Cook turkey patties for about 5 to 7 minutes on each side or until cooked through.
