Did you know there’s such a thing as a yellow watermelon? Me neither, so you can imagine my surprise last week when I cut into my watermelon only to find it looked more like a cantaloupe inside. Mind you, it had almost been sitting on my counter for almost two weeks because I was too lazy to cut it, and I knew if I didn’t cut it then, I would be throwing it away. Incidentally, that had nothing to do with the strange color. I rolled it over and spotted a huge sticker declaring “I’m Yellow Inside!”
According to What About Watermelon? {its seriously a website and if you ever want to know anything about watermelon, this is the place to look} this variety is known as the Yellow Flesh, or the Yellow Crimson. Yellow Flesh sounds really gross, like something from a zombie movie, so I’ll be sticking to the not so technical “yellow watermelon” when I talk about it.
The yellow watermelon tastes almost exactly the same as a red watermelon, although it may be a tad bit sweeter with a slight taste of cantaloupe. It’s the perfect treat on a hot summer day, or for a picnic with friends. Plus, it’s a good conversation starter, and you can wow your neighbors with all your yellow flesh knowledge {now it sounds like porn.}
This golden treat was so good we ate most of it by itself and turned the rest into popsicles. You can use your standard red watermelon if you want in this recipe, these will taste delicious either way. I forgot to take a photo of the yellow watermelon, so it’ll have to be ready for it’s close up next time.
Watermelon Popsicles
Ingredients:
2 cups cubed watermelon
1 cup frozen strawberries
1 banana
2 cups orange juice
Directions:
Add all ingredients to blender. Blend until well blended. Pour into Popsicle mold and freeze for several hours or overnight.
