This year we have a Girl Scout in the house, so we’ve had our fill of Girl Scout cookies, but when I got my hands on a Thin Mint Brownie recipe, I knew I had to make them. We had an Olympics themed progressive dinner in our neighborhood this weekend and we hosted the dessert house. I made these brownies, carrot cupcakes and chocolate fondue.
Get your Thin Mints while you can! Girl Scout cookie sales in Arizona go on until March 8th. Any of the cookies can be frozen, so be sure to stock up before they are all gone!
Thin Mint Brownies
1 sleeve of crushed Thin Mints Girl Scout Cookies
½ cup of vegetable oil
1 box of Brownie mix
¼ cup of water
Crush Thin Mints into medium size chucks (I put the cookies in a Ziploc bag and crushed them with my hands). Mix all ingredients into mixing bowl. Do not use electric mixer – batter will be stiff. Spread batter evenly in greased baking pan (13” x9”). Bake in center of oven at 350 degree for 30 – 35 minutes. Allow to cool before cutting.
